The determination of the total protein content according to international labeling laws is an essential tool for quality control and protein declaration in the food industry. Protein content can directly correspond to product properties and classifications, e.g. dough properties, foam formation, or the taste of beer, and can therefore be a decisive factor for product quality and price. High sample flexibility in food analysis
Our nitrogen and protein analyzer rapid MAX N exceed represents the industry standard in ease-of-use for measuring a combination of liquid and solid sample types. The upright crucible design means that measuring up to 5 g of solid samples or 5 ml of liquid samples is equally as simple and requires no additional materials or handling. Because the analyzer can measure such high weights, samples can be quite inhomogeneous, such as fruit juices and milkshakes, and still yield accurate and reproducible results.

Dietary fiber analysis
In the determination of dietary fiber content, a critical step in this method of food analysis is the determination of the protein content of the final digestion residue, which is a mixture of fiber, protein, ash, and filter aids. With its robust autosampler that facilitates automatic ash removal with large crucibles, our nitrogen and protein analyzer rapid MAX N exceed is especially suited to this analysis. New methods using plastic filter bags also present no challenge. Integration of the rapid MAX N exceed with dietary fiber analysis is an uncomplicated, cost-effective solution.
Food authenticity
